J'ai du bol, il y a de la Bolo.

Hier, à la machine à café, une discussion avec des collègues avait pour thème la cuisine.
Et plus particulièrement, la sauce Bolognaise.
Après un rapide tour de la question sur les différentes recettes (chacun à la sienne), on est arrivé à dire que cette sauce est, en fait, un moyen d'utiliser ce que l'on a sous la main. Et même des restes.

Spaghetti sauce (for approx. 24 people)

Except for the meat and the tomatoes, everything is alternative. Usually my dad makes the sauce with all the things he find in the house. He tastes all the time and adapts the taste during the process of cooking.

Fry small pieces of smoked bacon (200 g). Remove the bacon and use the same fat (to reduce the total fat content) to fry minced meat ( we use 1.5 kg half cow half pork, but pure pork is also possible). Make sure that all particles are separated.
Take a pot and stew onion (5 onions cut in slices - 4cm diameter onions) in olive oil. Add carrots (5, sticks), half a red and half a green paprika, seleriac (a few spoonfuls), 500 g of mushrooms, 3 liters tomatoes , garlic (4 pieces), 200 g of cut salami, add the meat and the bacon, salt, pepper, 1 piece of rosemary, 1 piece of sage, 4 leaves of laurel, a piece of thyme, 1 spoon of Worcester sauce, 2 spoons of ketchup, some Tabasco, 1 spoon of mustard, some basil. Leave everything for a few hours on a very small fire. When finished, add cheese

Taste and add tomato puree when there is not enough tomato mash.
